I have 3 off the top of my head.

Rock Band 2: Beat the endless setlist 2 by myself on expert without pausing on guitar

Gears of War Online Multiplayer: Took down the whole oppsoing team (4 people) by myself (my team died) with a chainsaw as they all rushed me.

Killzone 2 Online Multiplayer: Was playing the Assassinate mission, went into the enemy spawn building, killed everyone with a machine gun, ran out of ammo when i got to the target i was supposed to kill, whipped out my magnum and 1 shot to the head killed him and won the game.
